Nutritional, Sensory Evaluation and Biological Effect on diabetic rats of Cakes Enhanced with Pumpkin Fruit and Its Seeds | ||

| Abstract | ||
| The purpose of current study was to enhance the nutritional value of cakes by substituting wheat flour by pumpkin fruit and its seeds as a source of protein, phenolics and flavonoids. Cakes were made by substituting wheat flour with a constant percentage of fresh pumpkin fruit (10% as dry weight) or replacement wheat flour with fresh pumpkin fruit using the same previous percentage and different levels of whole pumpkin seeds (10, 20, 30 and 40%). The different kinds of cakes were subjected for nutritional and sensory evaluation. Effect of feeding with cakes enhanced with pumpkin fruit and its seeds on serum biochemical analysis and histological examination of pancreas for alloxan-induced diabetic male rats after three months treatment was also assessed. Results estimated that cakes containing both fresh pumpkin fruit and whole pumpkin seeds showed significantly increased (P<0.05) in protein, fiber, ash, phenolics and flavonoids as well as this increase was associated with the level of substituting by whole pumpkin seeds compared to control cakes. Sensory quality revealed that cakes containing fresh pumpkin fruit and 40% whole pumpkin seeds were the most acceptable comparing with control cakes. Data showed that glucose, triglycerides (TG), cholesterol (TC) and low-density lipoprotein (LDL) levels for diabetic rats which fed on cakes enhanced with fresh pumpkin fruit or cakes containing both fresh pumpkin fruit and different levels of whole pumpkin seeds significantly decreased (P<0.05) in comparison with diabetic rats, whereas, insulin and high-density lipoprotein levels were significantly higher (P<0.05) than diabetic rats. Findings revealed that a significant improve (P<0.05) in kidney and liver functions of diabetic rats treated with cakes enhanced with pumpkin (fruit or fruit and its seeds) compared to rats with diabetes. Histological analysis also clarified marked improvement in pancreatic tissues of diabetic rats treated with cakes enhanced with pumpkin (fruit and its seeds) comparing to diabetic rats and these findings are consistent with previous results mentioned above. The best improvement of different parameters was found in diabetic rats consumed cakes containing 40% whole pumpkin seeds and 10% pumpkin fruit as compared with diabetic rats where parameters reached to nearly normal values. In addition, these cakes contain the highest values of protein, fiber, phenolics and flavonoids, and the lowest levels from fat and calories comparing to control cakes. Therefore, it can be concluded that cakes prepared from pumpkin (fruit or fruit and its seeds) which were produced by the lowest cost considered from functional foods where pumpkin and its seeds had beneficial effects on nutritional and biological parameters of cakes. According to results, these cakes could be beneficial in the prevention and treatment of diabetes. Also, pumpkin cakes might be useful for people suffering from hyperlipidemia, obesity and malnutrition. Thus, this will help to promote the use of pumpkin cakes and management problems related to nutrition in Egypt. So, this study recommends increasing the production of food products containing pumpkin (fruit or fruit and its seeds) and improving nutrition education of people about the importance of consuming food products made from pumpkin and its many benefits for preventing and treating diabetes as well as other diseases in different media التقييم التغذوي والحسي والتأثير البيولوجي علي الفئران المصابه بمرض السکري للکيک المُحسن بفاکهة اليقطين وبذورها الغرض من الدراسة الحالية هو زيادة القيمة الغذائية للکيک عن طريق استبدال دقيق القمح بفاکهة اليقطين وبذورها کمصدر للبروتين والمرکبات الفينولية والفلافونويدات. وقد تم تحضير الکيک باستبدال دقيق القمح بنسبة ثابتة من فاکهة اليقطين الطازجة (10٪ على اساس الوزن الجاف) أو استبدال دقيق القمح بفاکهة اليقطين الطازجة بنفس النسبة السابقة ومستويات مختلفة من بذور اليقطين الکاملة (10٪ و20٪ و30٪ و40٪). وقد خضعت الانواع المختلفة من الکيک للتقييم الغذائي والحسى. وقد تم أيضاً تقييم تأثير التغذية بالکيک المُحسن بفاکهة اليقطين وبذورها على التحليل البيوکيميائي للمصل والفحص النسيجي للبنکرياس لذکور الفئران المصابة بمرض البول السکري الذى يُسببه الالوکزان بعد ثلاثة أشهر من المعاملة. وأوضحت النتائج أن الکيک المحتوى على کلاً من فاکهة اليقطين الطازجة وبذور اليقطين الکاملة أظهر زيادة معنوية (P<0.05) في محتوى البروتين والألياف والرماد والمرکبات الفينولية والفلافونويدات وارتبطت هذه الزيادة بمستوى الاستبدال ببذور اليقطين الکاملة مقارنة بالکيک الکنترول. وأشارت نتائج التقييم الحسي أن الکيک المحتوي على فاکهة اليقطين الطازجة و40٪ من بذور اليقطين الکاملة هو الأکثر قبولًا مقارنة بالکيک الکنترول. وتُشير النتائج إلي أن هناک انخفاضاً معنوياً (P<0.05) في مستويات الجلوکوز والدهون الثلاثية والکوليسترول والليبوبروتينات منخفضة الکثافة للفئران المصابة بمرض البول السکري والتي تغذت على الکيک المُحسن بفاکهة اليقطين الطازجة أو الکيک الذى يحتوي على کلاً من فاکهة اليقطين الطازجة ومستويات مختلفة من بذور اليقطين الکاملة بالمقارنة مع الفئران المصابة بمرض البول السکري، بينما لوحظ أن هناک زيادة معنوية (P<0.05) في مستويات الانسولين والليبوبروتينات مرتفعة الکثافة مقارنة بالفئران المصابة بمرض البول السکري. وقد أوضحت النتائج أن هناک تحسناً معنوياً (P<0.05) في وظائف الکبد والکلى للفئران المصابة بمرض البول السکري والمعاملة بالکيک المُحسن باليقطين (الفاکهة أو الفاکهة وبذورها) مقارنة بالفئران المصابة بمرض البول السکري. کما أظهر أيضاً الفحص النسيجي وجود تحسناً ملحوظاً في أنسجة البنکرياس في الفئران المصابة بمرض البول السکري المعاملة بالکيک المُحسن باليقطين وبذورة مقارنة مع الفئران المصابة بمرض البول السکري وهذه النتائج تتفق مع النتائج السابقة المذکورة أعلاة. وقد وُجد أن أفضل تحسناً للقياسات المختلفة کان في الفئران المصابة بمرض البول السکري التي تناولت الکيک المحتوى على 40٪ بذور اليقطين الکاملة و 10٪ فاکهة اليقطين مقارنةً بالفئران المصابة بمرض البول السکري حيث وصلت القياسات إلي القيم الطبيعية تقريباً. وبالاضافة إلي ذلک، يحتوى هذا الکيک على أعلى قيم للبروتين والألياف والمرکبات الفينولية والفلافونويدات، وأدني مستويات من الدهون والسعرات الحرارية مقارنة بالکيک الکنترول. من ذلک نستنتج أن الکيک المحضر من اليقطين (الفاکهة أو الفاکهة وبذورها) والذي تم انتاجة بأقل تکلفة يُعتبر من الاغذية الوظيفية حيث کان لليقطين وبذورة تأثيرات مفيدة على الخواص الغذائية والبيولوجية للکيک. وفقاً للنتائج، يمکن أن يکون هذا الکيک مفيداً في الوقاية والعلاج من مرض البول السکري. وأيضاً، قد يکون کيک اليقطين مفيداً للأشخاص الذين يُعانون من ارتفاع نسبة الدهون في الدم والسمنة وسوء التغذية، وبالتالى سوف يساعد ذلک على تشجيع استخدام کيک اليقطين ومعالجة المشاکل المتعلقة بالتغذية في مصر. لذلک توصي هذه الدراسة بزيادة إنتاج المنتجات الغذائية التي تحتوى على اليقطين (الفاکهة أو الفاکهة وبذورها) وتحسين الثقافة الغذائية للناس حول أهمية تناول المنتجات الغذائية المصنوعة من اليقطين وفوائدها العديدة في الوقاية من مرض البول السکري وعلاجة وکذلک الأمراض الآخرى عبر وسائل الإعلام المختلفة. الکلمات المفتاحية: اليقطين – بذور اليقطين الکاملة – مرض البول السکري – الکيک – الالوکزان – القيمة الغذائية – التقييم الحسى. | ||
